The Best Oatmeal in the World

Is it too dramatic to say this oatmeal recipe changed my life? I honestly don’t think so. Ask my roommates, I could eat this oatmeal for all three meals and then again as a midnight snack. And I won’t lie, that has happened. We all have those oatmeal days, right? No? Just me? OK.

If you love a warm bowl of oats but just feel bloated and hungry half an hour later, you’re not alone. This recipe has the fix, using real food only. Super fluffy, voluminous, filling, protein-packed oatmeal – no artificial powdery sh** required.

My oatmeal technique is weird so bear with me. And disclaimer, I did not think of this but I do wish I were that experimental in the kitchen. Another disclaimer, this recipe is not for our vegan friends but I’ve got things cooking for you too!

What you need:

  • 1/2 cup Old Fashioned Oats or Quick Oats (or 1/3 cup steel cut & see stove directions)
  • 1/2 cup Liquid egg whites (or 2-3 egg whites, separated)
  • Big ol’ scoop of natural peanut butter (or almond butter if that’s your thing maybe even go wild with the cashew butter I don’t care)
  • Toppings of choice (my fav is a sliced banana)

In the microwave:

  • Add oats to bowl and fill with water just so the oats are covered
  • Microwave for 1 min
  • Add egg whites (yolks not welcome here) and stir until combined
  • Microwave for 1 min – 1 min 20 s (depending on your microwave, start with 1 min then continue in intervals until you reach your desired consistency)
  • Stir in peanut butter
  • Add toppings
  • Devour

On the stove:

  • Add oats to nonstick saucepan with 1 cup water
  • Cook on low heat until oats have absorbed the majority of the water
  • Add egg whites (yolks not welcome here) and stir to combine
  • Continue stirring regularly until you find your desired consistency (keep an eye out so you don’t get scrambled eggs)
  • Move oatmeal to bowl
  • Stir in peanut butter
  • Add toppings
  • Devour

  1. Looking forward to trying this. A couple months ago, I started adding chia seeds to my Quick Oats as an easy additional source of protein. Banana, strawberries, blueberries, raisins or La Farm Bakery Hearth Baked Granola are my favorite toppings.
